Build an aroma notebook

Choose three spices already in your kitchen. Open one jar at a time and gently notice the aroma without inhaling loose powder. Use ordinary words: bright, woody, floral, earthy or something that reminds you of a familiar dish.

Write down the spice name and the date you opened it, if known. Compare the jars side by side without deciding that one is better. Your notes describe your own perception, not a required vocabulary.

When you next use one in a familiar recipe, add a note about the finished dish. Aroma in a jar and flavor in a meal are different experiences. Revisit those observations before deciding what belongs on your shopping list.
